There's an even simpler solution. Use a VGA dummy chord. This is a cable that has a VGA end and a USB end. When plugged in, the system thinks a monitor is present.
I have not messed about much with the internals of xorg, so I don't know if virtual monitors and such can be defined. I would not doubt it, though, as it is possible to run fake xorg on headless servers for those applications which might need them. One example of an app like that is calibre e-book management.
